**Cuisine Type:** Mediterranean-inspired

**Dietary Preferences:** Heart-Healthy, Gluten-Free (option to use regular flour if gluten isn't an issue)

**Description:** This cake uses olive oil instead of butter, almond flour for a boost of healthy fats and fiber, and citrus for flavor and antioxidants. It's moist, flavorful, and a guilt-free treat.

**Estimated Nutritional Information (per serving, based on 12 servings):**

*   **Carbohydrates:** 25-35g (depending on sweetener used)

**Ingredients:**

*   **Dry Ingredients:**

    *   2 cups Almond Flour (blanched, finely ground) - *For gluten-free option and healthy fats*

    *   1 teaspoon Baking Powder

    *   1/2 teaspoon Baking Soda

    *   1/4 teaspoon Salt

    *   1/2 cup Oat Flour (if you want to make it even more heart healthy!)

*   **Wet Ingredients:**

    *   1 cup Extra Virgin Olive Oil (good quality, fruity flavor) - *Heart-healthy fat source*

    *   3 Large Eggs

    *   3/4 cup Honey or Maple Syrup (or other natural sweetener, adjust to taste) - *Natural sweetener*

    *   1/4 cup Orange Juice (freshly squeezed) - *Flavor and moisture*

    *   Zest of 1 Orange

    *   1 teaspoon Vanilla Extract

    *   1/2 cup Plain Greek Yogurt (low-fat or non-fat) - *Moisture and protein*

*   **Optional Glaze:**

    *   1 cup Powdered Sugar (or Erythritol/Monk Fruit sweetener for lower sugar option)

    *   2-3 tablespoons Orange Juice

**Equipment:**

*   9-inch Springform Pan or Cake Pan

*   Mixing Bowls (large and medium)

*   Whisk

*   Rubber Spatula

*   Measuring Cups and Spoons

*   Zester

*   Juicer (for orange juice)

*   Cooling Rack

**Instructions:**

**1. Prepare the Pan:**

*   Preheat oven to 350°F (175°C).

*   Grease the 9-inch springform pan or cake pan with olive oil or cooking spray.  Line the bottom with parchment paper for easy removal.

**2. Combine Dry Ingredients:**

*   In a large mixing bowl, whisk together the almond flour, oat flour (if using), baking powder, baking soda, and salt.  Make sure there are no clumps.

**3. Combine Wet Ingredients:**

*   In a separate medium mixing bowl, whisk together the olive oil, eggs, honey (or maple syrup), orange juice, orange zest, vanilla extract, and Greek yogurt until well combined and smooth.

**4. Combine Wet and Dry Ingredients:**

*   Pour the wet ingredients into the bowl with the dry ingredients.

*   Gently fold the wet and dry ingredients together using a rubber spatula until just combined. Be careful not to overmix. A few streaks of flour are okay.

**5. Bake the Cake:**

*   Pour the batter into the prepared cake pan, spreading it evenly.

*   Bake for 35-45 minutes, or until a wooden skewer inserted into the center comes out clean or with just a few moist crumbs.

*   *Note: Baking time may vary depending on your oven.*

**6. Cool the Cake:**

*   Let the cake cool in the pan for 10-15 minutes.

*   Then, carefully remove the cake from the pan and place it on a wire rack to cool completely.

**7. Prepare the Optional Glaze (while cake is cooling):**

*   In a small bowl, whisk together the powdered sugar (or sugar substitute) and orange juice until smooth. Add more orange juice, 1 tablespoon at a time, until you reach your desired consistency.

**8. Glaze the Cake (optional):**

*   Once the cake is completely cool, drizzle the glaze evenly over the top.

*   Let the glaze set for a few minutes before serving.

**Cooking Times:**

*   **Prep Time:** 15 minutes

*   **Bake Time:** 35-45 minutes

*   **Cooling Time:** 1-2 hours (or until completely cool)

**Serving Suggestions:**

*   Serve slices of the cake as a dessert or afternoon treat.

*   Garnish with fresh berries (strawberries, blueberries, raspberries) for added antioxidants and flavor.

*   A dollop of Greek yogurt or a light dusting of powdered sugar can also be added.

*   Pair with a cup of herbal tea or coffee.

*   Store leftover cake in an airtight container at room temperature for 2-3 days, or in the refrigerator for up to 5 days.

**Tips for Heart-Healthy Baking:**

*   **Use Olive Oil:**  Replace butter with olive oil. It's a great source of monounsaturated fats, which are beneficial for heart health.

*   **Choose Whole Grains:**  Opt for whole wheat flour, oat flour, or almond flour instead of refined white flour.  These contain more fiber, which helps lower cholesterol.

*   **Reduce Sugar:**  Use natural sweeteners like honey, maple syrup, or fruit purees in moderation.  Consider using sugar substitutes like stevia or erythritol.

*   **Add Nuts and Seeds:**  Incorporate nuts and seeds like almonds, walnuts, flax seeds, or chia seeds for healthy fats, fiber, and antioxidants.

*   **Incorporate Fruits and Vegetables:**  Add fruits and vegetables like berries, apples, bananas, zucchini, or carrots to your baked goods for added nutrients and moisture.

*   **Use Spices:**  Spices like cinnamon, nutmeg, and ginger can add flavor without adding extra sugar or fat.

Enjoy your delicious and heart-healthy cake!

Morning Strawberry Protein Shake

Garden Strawberries So, I like strawberries, and it is the season for all of us back yard growers to start picking! I downsized my plot of plants, but I still have some to pick periodically as they ripen.  The local farms should be ready for the "you pick deals" from June - mid July now! There are quite a few growers in the PNW to choose from. A local favorite is the  Biringer Farm , you can check out their website for more information.  After, of course, the morning coffee, I will make my breakfast shake. It consists of one cup of unsweetened almond milk, unsweetened coconut milk, or unsweetened oat milk. Normally when watching calories, I will opt for almond or coconut milk. I also like at times to mix all three to make one full cup!  I will add one scoop of whey, my morning vitamin, and one cup of frozen strawberries. Sometimes I will add a frozen banana or frozen blueberries. My favorite is just using strawberries. I blend this for about a minute to make sure eve...
