Mix all the ingredients together except 1/2 the cheese set aside. Make sure it is all blended together. Form it in a large loaf pan or any pan that will fit your meatloaf and still gives it room to release the fluids around it without spilling over. You can even use a cast iron skillet and make it round instead of loaf shaped. Cook for 1.5 - 2.0 hours. Check after 1.5 hours to see if done. If not, cook 1/2 hour longer. I like mine well done. Add the remaining cheese on top the last 5 minutes in the oven.</div><div style="text-align: left;"><br /></div><div style="text-align: left;">Like it extra spicy? Add jalapeños when adding the cheese on top. Serve with guacamole or sliced avocado, and sour cream. A very recent one this year 2023, Cooking Light magazine, had an assortment of different "power bowls" to make. I decided to try this one with chicken, but you can substitute any type of meat you would like in it, i.e. shredded beef, ground beef, and if you are daring, no meat substitutes! Well, that last one is not for me! </p><p>Below is the actual recipe I used. If you don't subscribe to Cooking Light, you are missing some great ideas of recipes for you and/or your family. When I saw this edition, I knew it was a game changer for me. I can take the recipe and modify it for the fussy eaters in my family and make it their own. </p><p>First, I made it "almost" like the recipe calls for to see what the results would be from everyone. My conclusion was, I loved it just the way it was, but not so with the others. So below is my suggestion on what to do so you don't cook separate meals, just separate bowls by making or subtracting a few ingredients.</p><p><b>Ingredients: </b></p><div style="text-align: left;">1/2 c. uncooked quinoa, rinsed and drained <br />1 tsp. ground cumin<br />1/2 tsp. salt, divided <br />1/2 tsp. black pepper, divided <br />2 (8 oz.) boneless, skinless chicken breast halves, halved horizontally <br />1 Tbsp. olive oil <br />1 avocado <br />1/4 c. finely chopped fresh cilantro <br />2 Tbsp. plain fat-free (greek-style) yogurt <br />2 tsp. fresh lime juice <br />2 c. shredded iceberg lettuce <br />1 c. chopped tomato<br />3/4 c. reduced sodium black beans, drained and rinsed <br />1 oz. shredded reduced fat cheddar cheese (1/4 c.)<br />2 Tbsp. roasted salted pumpkin seed kernels (pepitas)</div><div style="text-align: left;"><br /></div><div style="text-align: left;">I made the quinoa separate with the added ground cumin, 1/4 tsp. black pepper and 1/4 tsp. salt. I set it aside to cool.</div><div style="text-align: left;"><br /></div><div style="text-align: left;">I took the chicken as it suggested and put the rest of the black pepper and salt on both sides. I heated the 1 tsp. of olive oil and cooked the chicken after I had halved it horizontally and then sliced it. The recipe said to cook (6-8 minutes when it is no longer pink) after you halved it, but I like to cook it already cut in sliced or smaller chunks for a crispier version. It really can just be your preference. If you just do the halves, then slice it into strips after you have cooked it and let it sit for 5 minutes. </div><div style="text-align: left;"><br /></div><div style="text-align: left;">The avocado, cilantro, yogurt, and lime juice are to make a dressing to go on top. You just put it in a bowl and cream all of it together. I did not do this, because I am the only one who eats avocados, so I gave everyone the choice of dressing to use, and they chose ranch. With beef I would think French - Catalina dressing would be good too! When I have enough avocado eaters invited over, I will have to try this dressing recipe!</div><p>To make the bowls, you would put in the quinoa, then layer with the iceberg lettuce and the rest of the toppings. Since I didn't make the dressing, I used my avocado and sliced it for my bowl and added in the cilantro to everyone else's bowl on top and squeezed lime juice over each bowl. I omitted the tomatoes from everyone else's bowl but mine.</p><p>The quinoa was only a hit with me! I loved it, but the others, not so much. They would prefer white rice, but next time I will make it with brown rice to see if that would please them first! I also like diverse types of lettuce as well as iceberg lettuce so with my bowl I prefer to add a mixture. I also love tomatoes so mine will be topped with it as well.</p><p>This recipe they posted is so good just the way it is except for some fussy eaters who shall not be named. I downsized my plot of plants, but I still have some to pick periodically as they ripen. </p><p>The local farms should be ready for the "you pick deals" from June - mid July now! There are quite a few growers in the PNW to choose from. A local favorite is the <a href="https://www.biringerfarm.com/berries-2/berry-crop-info/">Biringer Farm</a>, you can check out their website for more information. </p><p>After, of course, the morning coffee, I will make my breakfast shake. It consists of one cup of unsweetened almond milk, unsweetened coconut milk, or unsweetened oat milk. Normally when watching calories, I will opt for almond or coconut milk. I also like at times to mix all three to make one full cup! I will add one scoop of whey, my morning vitamin, and one cup of frozen strawberries. Sometimes I will add a frozen banana or frozen blueberries. My favorite is just using strawberries. I blend this for about a minute to make sure everything including the vitamin is processed. </p><p>This is what I do now most of the time, but I do like to switch it up with assorted products and to try new healthy ingredients, so it never gets too boring! There are times I need certain supplements so I will toss them in if they are an agreeable ingredient to a protein shake. It makes it so much easier for me to ingest when in liquid form. I hate taking pills! Yes, I said it...</p><p>This is a quick meal, satisfying me for hours. I started out watching people on YouTube making bread and it was so fast and easy with the mixer. The first recipes I started making were French bread. I also tried sourdough but didn't use the mixer because, well, "they" the experts said not to. You really can over knead the sourdough!</span></div><div style="text-align: left;"><span style="font-family: inherit;">The best bread recipe I found was on the back package of Bobs Red Mill's wheat flour! You might ask, "what is the right temperature?" My rule of thumb is to get it the same temperature as you would for a baby bottle, not too hot, and not too cold. This way the yeast will activate. </span></span></p><div><span style="font-family: inherit; font-size: 18px;">Using your Kitchen Aid bowl, pour the warm water in with the yeast and mix it up with your plastic spatula. Let it sit for 5 minutes to activate the yeast.</span></div><div><span style="font-family: inherit;"><br /></span></div><div><span style="font-size: 18px;"><span style="font-family: inherit;">Next add the warm, room temperature milk, honey, oil and stir. Add the 2 3/4 c. of unbleached flour and salt. Mix with the mixer on #2 speed for just a minute. Add the 2 3/4 c. of whole wheat flour and mix for 10 minutes on #2 speed. You will know it is ready when the dough springs back when you push it and not stick to your hands. </span></span></div><div><span style="font-size: 18px;"><span style="font-family: inherit;"><br /></span></span></div><div><span style="font-size: 18px;"><span style="font-family: inherit;">Next take the dough out of the bowl and form it into a ball. I add oil to the Kitchen Aid bowl and coat the bottom and sides and put the dough down top side and coat with oil and turn it over. Place a slightly wet kitchen towel (clean, please!) over the top and placed in a dark, warm place which is usually your oven. I turn the oven light on and even turn the stove on for less than one minute on the warm 170-degree temperature. I will immediately turn it off. It is just to get a slight warming to the oven. You don't want it to cook, you want the dough to rise!</span></span></div><div><span style="font-size: 18px;"><span style="font-family: inherit;"><br /></span></span></div><div><span style="font-size: 18px;"><span style="font-family: inherit;">I wait 60 minutes and check the dough. When it has doubled in size, I remove it (beat it down some before removing from the bowl) and place it on a clean counter that is sprinkled with white flour. I will knead it a few times and form it into a ball before cutting it in half. I usually make two loaves in my 4x8 pans that have been coated with olive oil. If you want to make twisted bread or use your baguette pans, then roll it out and cut it into 3 even pieces. Roll the pieces to fit and place in the banquette pan or twist like in a braid to make the braided bread and use parchment paper on a big sheet pan to cook. If you don't have parchment paper, then just lightly oil the sheet pan and bake. I prefer parchment paper for easy clean up! Whichever way you choose to do it, it will be good!</span></span></div><div><span style="font-size: 18px;"><span style="font-family: inherit;"><br /></span></span></div><div><span style="font-size: 18px;"><span style="font-family: inherit;">You can also let the dough rise again before baking for about 30-45 minutes, but I find I don't need to do that with this recipe. Before putting it in the oven make sure you coat it with egg whites and make some cuts on top of the loaves. I like to make designs that look like wheat stalks or even a flower look. You can also sprinkle bagel topping seasoning on top for a gourmet flavor! It is a perfect combination for bread. I have also added garlic and herbs into the dough after it has risen.</span></span></div><div><span style="font-size: 18px;"><span style="font-family: inherit;"><br /></span></span></div><div><span style="font-size: 18px;"><span style="font-family: inherit;">Cook for 30 minutes or until brown on top and sides. Healthier version than I usually bake. I substituted the white sugar with honey, egg whites for the whole egg, and plain Greek yogurt for the butter. The bread is moist, and the texture is firm. I don't even miss the butter because of the yogurt!</p><div style="text-align: left;">3 ripe bananas smashed<br />1/2 c. plain non-fat Greek yogurt <br />1/4 c. of raw honey (however sweet you would like it)<br />1 tsp. of baking soda <br />dash or a pinch of salt <br />1 tsp. vanilla extract<br />2 Tbsps. egg whites to equal one egg<br />1 c. whole wheat flour <br />1 c. ground pecans or walnuts <br />1/4 c. of white flour (more if needed)<br />Oil to coat the pan - I prefer extra virgin olive oil</div><p>Pull out that loaf pan no bigger than 4x8 and coat it with a small amount of olive oil. Preheat the oven to 350 degrees.</p><p>Smash those bananas in a bowl and add 1/2 c. of plain non-fat, or low-fat Greek yogurt while mixing it all. Mix well with the honey, baking soda, salt, vanilla, and egg whites. Add 1 cup of whole wheat flour and 1 cup of ground nuts and mix. Next, depending on how thick the nuts make the mixture, I add 1/4 c. of white flour up to 1/2 c. depending on the thickness of the mix after adding the nuts. Usually, it is thicker than cake batter. You don't want it runny or too thick for the batter—something like the middle of the road. The Greek yogurt gives it a good texture.</p><p>Pour the mixture into the prepared loaf pan and set the timer to 50 minutes. Depending on your oven, it may cook faster. I check it for 50 minutes to see if it springs back when pushed on, or I'll stick a toothpick into the center to see if it comes out clean or close to it! If not, leave in another 5 minutes and check again. I only bake it for 1 hour at maximum. You don't want to overcook!</p><p>Take it out and remove it from the pan. Place it on a metal cooling rack. I like to eat it while it is warm. If you want whipped cream, add a small dab on top. You can also add warmed fruit such as blueberries and strawberries. Don't overdo it, or it won't be too 💓-y! This bell pepper dish is actually an old classic that we both enjoy so happy to make it for the first night that we have to throw out all of our junk and medium to high sugar food, and buy no refined sugar, potatoes, and to my husband's detriment white rice dishes! </div>

I studied everything I could on "Dr. Google" (as my physician would say), but next week we will be going in to see a dietician to answer all our questions to make sure we have it right.<br />

This morning I went through our pantry and read every label on the jars, cans, and bags. It appears that most everything we have has tons of sugar (maybe not tons but he can't eat hardly any) in it and other things that we can't eat. I pulled out about 12 full bags and 6 Tupperware containers of food that we can no longer eat. I will be stopping by the local food bank with the unopened products for some people who can eat sugar with no problems.<br />

Have you ever tried to make vanilla bean extract homemade? I just did! I am so excited about the project and I'm hoping for a tasty outcome.<br />
<br />
Here is a picture of my jar, along with 10 grade A Madagascar bourbon cured vanilla bean stalks sitting straight up and not bent. I ordered them from a company selling on Amazon. They are not cheap but in the long run, I believe they will be worth the money. The clear liquid is from a full bottle of vodka. I may have a lot of explaining to do when my husband finds the empty vodka bottle in our recycling bin.<br />

I also ordered a glass leak-proof swing top cap jar that is slightly taller than the vanilla bean stalks so the liquid will fully cover them.<br />
<br />
Now, I just need to place the jar in the pantry waiting for the vanilla beans to flavor the vodka and change it into vanilla bean extract. This will take months, but I believe it is well worth the effort. Once it has a nice dark color and you can smell the sweet vanilla, it is ready! As I use it I will keep adding more vodka to keep the vanilla beans covered with liquid and add additional vanilla beans as needed.<br />

Well, you have heard of crab cakes but my favorite is chicken cakes! Made the same way but I use the white chicken breast in the can since it has about the same consistency.<br />
<br />
Ingredients: <br />
8 Tbs of olive oil (reserve 4 Tbs)<br />
1 Tbs of butter<br />
2 large bell peppers chopped (any color - I prefer red and organic)<br />
1 yellow sweet onion chopped (substitute yellow or red)<br />
2 Tbs of minced garlic<br />
1/4 cup of chopped cilantro (fresh) <br />
2 Tbs of dijon mustard<br />
2 cans of white chicken breast drained <br />
2 eggs slightly beaten <br />
3/4 cup of panko fine bread crumbs (substitute any fine bread crumbs)<br />
<b>Spice to taste </b>- I use the following:<br />
1 Tbs of black pepper<br />
1 Tbs of cayenne pepper (less if you don't like spicy)<br />
1 Tbs of turmeric<br />
1 Tbs of ground ginger<br />
1 Tbs of dried parsley<br />
1 Tbs of dried basil <br />
1 Tbs of salt ( optional - I don't use it because the canned chicken as salt in it)<br />

Heat oil and add the bell peppers, onions, garlic and cilantro. Cook about 10 minutes on medium heat until the bell peppers and onions are soft.<br />

Heat oil again with the 1 Tbs of butter. Make patties about 1/3 size each and add to the hot oil. Cook on a low medium heat flipping 1/2 way after each side is brown and crispy. Do not overcook since the canned chicken is already cooked and not raw.<br />

4 boneless chicken breast<br />
1 can of Mexican style tomatoes<br />
1 can of green chilies<br />
1 can of red kidney beans or black beans<br />
1 Tbs of Olive Oil or any other type of oil you like <br />
12 corn tortillas - soft or hard<br />

<u>Rub for chicken: </u> <br />
2-3 Tbs of Olive oil or any other type of oil you like<br />
1 Tbs of chili powder<br />
3/4 tsp of Cumin<br />
1 tsp of tumeric<br />
1 tsp of fajita seasoning (optional)<br />
1 tsp of mesquite seasoning (optional)<br />
1/2 tsp of ground ginger<br />
1/2 tsp of ground pepper<br />
1/2 tsp of sweet ginger garlic (optional)<br />
1/2 tsp of cayenne pepper (optional)<br />

<li>Rub the crock pot all over with the oil or you can spray it with your favorite oil spray. </li>
<li>Add in the crock pot Mexican style tomatoes, green chilies, and beans. </li>
<li>Rub the chicken breast with oil all over front and back. </li>
<li>Mix all the spices together and rub all over on both sides of the chicken breast - use generously so all of the chicken is coated. </li>
<li>Put the chicken breast in the crock pot with the tomato and bean mixture cooking on high for 2-3 hours until the chicken is done. If you start with half frozen chicken make sure it is cooked all the way through. </li>
<li>Take the chicken when done and make thin or medium size slices. I use a slotted spoon to remove the bean and tomato mixture for serving so it is not too juicy for the filling.</li>
<li>Grill your soft tortillas in a small amount of hot oil or warm your hard shells prior to serving.</li>
<li>Fill the tortillas with both the chicken and mixture. </li>
<li>Top with sour cream, avocado, lettuce, tomatoes, black olives and/or hot sauce. Chances are you won't need any hot sauce because the flavor is out of this world! </li>

We decided to stop in for happy hour and check out this small eatery in the north Ballard Crown Hill area of Seattle off Holman road NW. We were delightfully surprised to find out how good it was and so reasonably priced. We have now found a jewel of a place for awesome Mexican food not far from where we live and have been back several times. <br />

I saw this French recipe on Facebook made with cherries. I tried it and loved the custard taste and cherry flavor. I decided to try it with blueberries and take both the cherry and blueberry to a community party. The blueberry pie didn't last long but I still had a little left over from the cherry one. I highly recommend this pie made with either cherry or blueberries. I can't wait to try different variations!<br />

Take a 9 inch pie pan and grease the bottom with the butter on bottom and all sides.<br />
Sprinkle and coat the pan with the sugar. Add the blueberries and make sure they are even within the pan.<br />
<br />
In the meantime preheat your oven to 350 degrees.<br />

Mix the eggs and milk together followed by the flour, salt and sugar. I like to add extra vanilla and almond extract but if you don't just use 1/2 tsp. Mix into the batter the melted butter. The batter will appear to be runny but cooks to a custard texture. <br />
<br />
Pour the batter into the pie pan. Cook in the oven for approx. 40 minutes. It will puff up and then subside. You will know it is done when it is a golden brown. Optional - dust with the powdered sugar or leave off. <br />
<br />
I liked this warm and cold. It was a hit with everyone that tried it. You can't go wrong serving this for dinner and at parties. It is great at every meal even at breakfast!<br />

I had the opportunity to go to lunch at McMenamin's Brew Pub awhile back and they had this delicious cheeseburger on the special menu. It looked so good when they brought it to the table that I had to take a picture! It not only looked good, it was perhaps the best cheeseburger I have ever had! <br />

The beer that I paired it with was their most popular Hammerhead brew which is a pale ale. Usually I can't decide which beer to order since I happen to like them all. They are all handcrafted brews that pair with their excellent choice of food offered on their main and weekly specialty menus. The selection is great and so is the service. <br />
<br />
McMenamins has a lot to offer if you are traveling in Washington and Oregon. They have many locations that also offer hotel accommodations along with their restaurants.<br />

Ok, there is really only two ingredients that are listed on the instructions that came with the machine. How bad can it be? Well, for starters instead of talking while measuring it may be better to stay quiet and pay attention! I actually doubled the flour and didn't have enough eggs to compensate so my Husband being the hungry man he is obliged and went to the store to get the eggs.<br />

Now, I was ready to knead and knead until I got the dough the way I wanted it. I used 4 cups of flour, 10 eggs (room temp) and even though the recipe didn't call for it I added lots of dried basil and dried Italian seasoning.<br />

What I would do differently? Well, for starters I would measure right and not make the noodles quite so thick! The dial on the machine goes from 0 to 9 so I need to practice with making thinner type noodles even though I have to admit I LOVED the meal. <br />

Well, I do! I decided to use my waffle iron and make protein waffles filled with fruit and ground flax seed. They are great!<br />

I start out with the waffle iron getting hot and spray it with Pam. In the meantime I mix up the following ingredients to equal 1 cup.<br />

1 teaspoon of real pure vanilla or extract will work too! (optional)<br />
2 heaping tablespoons of ground flax seed which will digest better than seeds.<br />
1/4 cup of fresh blueberries and/or strawberries - not too many or the batter will be too thin <br />
You can use regular milk, coconut or almond milk - just enough to get the batter to the right consistency...I prefer a blend of coconut and almond milk.....approx. 1/4 cup or less.<br />
