Ingredients:

  • Apple Sauce (unsweetened): 1/2 cup (acts as a natural sweetener and binder)

  • Lemon Juice: 1 tablespoon (enhances the berry flavors and adds brightness)

  • Stevia/Monk Fruit Blend: 1-2 tablespoons (adjust to your sweetness preference - start with less and add more to taste)

  • Vanilla Extract: 1/2 teaspoon (enhances the sweetness and adds warmth)

  • Cinnamon: 1/4 teaspoon (optional, adds a warming spice)

  • Water: 2 tablespoons (if using frozen berries, you may need a bit more)

For the Almond Crumble:

  • Almond Flour: 1/2 cup (low-carb and provides a nutty flavor)

  • Rolled Oats (gluten-free if needed): 1/4 cup (adds fiber and texture)

  • Almonds (slivered or chopped): 1/4 cup (adds crunch and healthy fats)

  • Coconut Oil (melted): 2 tablespoons (provides healthy fats and binds the crumble)

  • Stevia/Monk Fruit Blend: 1 tablespoon (adjust to your sweetness preference)

  • Cinnamon: 1/4 teaspoon (optional, complements the almond flavor)

  • Pinch of Salt: Enhances the flavors

Equipment:

  • Medium saucepan

  • Baking sheet

  • Mixing bowl

  • Wooden spoon or spatula

Instructions:

1. Prepare the Berry Compote:

  • In a medium saucepan, combine the mixed berries, unsweetened apple sauce, lemon juice, stevia/monk fruit blend (start with 1 tablespoon), vanilla extract, and cinnamon (if using).

  • If using frozen berries, add 2 tablespoons of water to help prevent sticking.

  • Place the saucepan over medium heat and bring the mixture to a gentle simmer.

  • Reduce the heat to low and let the compote simmer for 15-20 minutes, stirring occasionally, until the berries have softened and the sauce has thickened slightly.

  • Taste the compote and add more stevia/erythritol blend if needed to achieve your desired sweetness.

  • Remove from heat and set aside.

2. Prepare the Almond Crumble:

  • Preheat your oven to 350°F (175°C).

  • In a mixing bowl, combine the almond flour, rolled oats, slivered or chopped almonds, stevia/erythritol blend, cinnamon (if using), and a pinch of salt.

  • Pour the melted coconut oil over the dry ingredients and mix well until the mixture resembles coarse crumbs.

3. Bake the Almond Crumble:

  • Spread the almond crumble evenly on a baking sheet.

Morning Strawberry Protein Shake

Garden Strawberries So, I like strawberries, and it is the season for all of us back yard growers to start picking! I downsized my plot of plants, but I still have some to pick periodically as they ripen.  The local farms should be ready for the "you pick deals" from June - mid July now! There are quite a few growers in the PNW to choose from. A local favorite is the  Biringer Farm , you can check out their website for more information.  After, of course, the morning coffee, I will make my breakfast shake. It consists of one cup of unsweetened almond milk, unsweetened coconut milk, or unsweetened oat milk. Normally when watching calories, I will opt for almond or coconut milk. I also like at times to mix all three to make one full cup!  I will add one scoop of whey, my morning vitamin, and one cup of frozen strawberries.
