Making Homemade Pasta Noodles!

Homemade Pasta

I bought a pasta making machine with the drying rack but let it sit in my closet close to a year before actually using it.  I had been so eager to buy but so reluctant to use!  I finally overcame my fear of failure when I pulled it out of the box and made the decision to try it.

Add the eggs in the center and beat them with a fork
Ok, there is really only two ingredients that are listed on the instructions that came with the machine.  How bad can it be?  Well, for starters instead of talking while measuring it may be better to stay quiet and pay attention!  I actually doubled the flour and didn't have enough eggs to compensate so my Husband being the hungry man he is obliged and went to the store to get the eggs.

Adding the seasoning
Now, I was ready to knead and knead until I got the dough the way I wanted it.  I used 4 cups of flour, 10 eggs (room temp) and even though the recipe didn't call for it I added lots of dried basil and dried Italian seasoning.

Dough is ready!

After the dough was the consistency that I wanted, all smooth and no lumps, I mashed it together sorta like a meatloaf and wrapped it in cooking paper.  I then cut it into slices to get ready to put in the pasta machine.
wrap in paper for easy cutting and no marks on your table!
There is a dial for thickness.  I started on 1 and worked up to 3
Dry for at least an hour before cooking!
Select a good red wine for your meal

My Pasta loaded with sauce and ready for dinner paired with a glass of red wine!!

What I would do differently?  Well, for starters I would measure right and not make the noodles quite so thick!  The dial on the machine goes from 0 to 9 so I need to practice with making thinner type noodles even though I have to admit I LOVED the meal.

I  used my favorite brand of flour:

I also picked a wine from my selection bought from www.nakedwines.com:  Arbor Crest - Cabernet Sauvignon!

Tex-Mex Chicken Burrito Bowl

Tex-Mex Chicken Burrito Bowl Okay, I like to try different things, so I buy lots of food magazines for ideas! A very recent one this year 2023, Cooking Light magazine, had an assortment of different "power bowls" to make. I decided to try this one with chicken, but you can substitute any type of meat you would like in it, i.e. shredded beef, ground beef, and if you are daring, no meat substitutes! Well, that last one is not for me!  Below is the actual recipe I used. If you don't subscribe to Cooking Light, you are missing some great ideas of recipes for you and/or your family. When I saw this edition, I knew it was a game changer for me. I can take the recipe and modify it for the fussy eaters in my family and make it their own.  First, I made it "almost" like the recipe calls for to see what the results would be from everyone. My conclusion was, I loved it just the way it was, but not so with the others. So below is my suggestion on what to do so you don't

Cooking at Home During Quarantine

I like cooking, but I can't wait to be able to go out, sit at a table in a restaurant, order, eat, and enjoy family and friends. The only thing I won't like is the bill, but it will be so worth it. During this quarantine, if you have the funds and can help out your favorite local eateries, do so. They are struggling and take-out orders can help keep them in business.

Morning Strawberry Protein Shake

Garden Strawberries So, I like strawberries, and it is the season for all of us back yard growers to start picking! I downsized my plot of plants, but I still have some to pick periodically as they ripen.  The local farms should be ready for the "you pick deals" from June - mid July now! There are quite a few growers in the PNW to choose from. A local favorite is the  Biringer Farm , you can check out their website for more information.  After, of course, the morning coffee, I will make my breakfast shake. It consists of one cup of unsweetened almond milk, unsweetened coconut milk, or unsweetened oat milk. Normally when watching calories, I will opt for almond or coconut milk. I also like at times to mix all three to make one full cup!  I will add one scoop of whey, my morning vitamin, and one cup of frozen strawberries. Sometimes I will add a frozen banana or frozen blueberries. My favorite is just using strawberries. I blend this for about a minute to make sure everything i
