European Inspired Berry Compote with Almond Crumble

Berry Compote with Almond Crumble
This recipe utilizes natural sugar substitutes common in European cuisine to create a delicious and heart-healthy dessert or breakfast topping. It's low in sugar, fat, and carbohydrates, making it ideal for those seeking a healthier alternative to traditional sugary treats. The berry compote is a nod to classic European fruit desserts, while the almond crumble adds a satisfying textural contrast.

Yields: 6 servings Prep time: 15 minutes Cook time: 20 minutes

Ingredients:

For the Berry Compote:

  • Mixed Berries (fresh or frozen): 2 cups (strawberries, raspberries, blueberries, blackberries - a mix is best for flavor and nutrients)

  • Apple Sauce (unsweetened): 1/2 cup (acts as a natural sweetener and binder)

  • Lemon Juice: 1 tablespoon (enhances the berry flavors and adds brightness)

  • Stevia/Monk Fruit Blend: 1-2 tablespoons (adjust to your sweetness preference - start with less and add more to taste)

  • Vanilla Extract: 1/2 teaspoon (enhances the sweetness and adds warmth)

  • Cinnamon: 1/4 teaspoon (optional, adds a warming spice)

  • Water: 2 tablespoons (if using frozen berries, you may need a bit more)

For the Almond Crumble:

  • Almond Flour: 1/2 cup (low-carb and provides a nutty flavor)

  • Rolled Oats (gluten-free if needed): 1/4 cup (adds fiber and texture)

  • Almonds (slivered or chopped): 1/4 cup (adds crunch and healthy fats)

  • Coconut Oil (melted): 2 tablespoons (provides healthy fats and binds the crumble)

  • Stevia/Monk Fruit Blend (or my favorite: honey or maple syrup): 1 tablespoon (adjust to your sweetness preference)

  • Cinnamon: 1/4 teaspoon (optional, complements the almond flavor)

  • Pinch of Salt: Enhances the flavors

Equipment:

  • Medium saucepan

  • Baking sheet

  • Mixing bowl

  • Wooden spoon or spatula

Instructions:

1. Prepare the Berry Compote:

  • In a medium saucepan, combine the mixed berries, unsweetened apple sauce, lemon juice, stevia/monk fruit blend (start with 1 tablespoon), vanilla extract, and cinnamon (if using).

  • If using frozen berries, add 2 tablespoons of water to help prevent sticking.

  • Place the saucepan over medium heat and bring the mixture to a gentle simmer.

  • Reduce the heat to low and let the compote simmer for 15-20 minutes, stirring occasionally, until the berries have softened and the sauce has thickened slightly.

  • Taste the compote and add more stevia/erythritol blend if needed to achieve your desired sweetness.

  • Remove from heat and set aside.

2. Prepare the Almond Crumble:

  • Preheat your oven to 350°F (175°C).

  • In a mixing bowl, combine the almond flour, rolled oats, slivered or chopped almonds, stevia/erythritol blend, cinnamon (if using), and a pinch of salt.

  • Pour the melted coconut oil over the dry ingredients and mix well until the mixture resembles coarse crumbs.

3. Bake the Almond Crumble:

  • Spread the almond crumble evenly on a baking sheet.

  • Bake in the preheated oven for 8-10 minutes, or until the crumble is golden brown and slightly toasted.

  • Remove from the oven and let the crumble cool completely on the baking sheet. This will allow it to crisp up further.

4. Assemble and Serve:

  • Spoon the berry compote into individual serving bowls.

  • Top each serving with a generous sprinkle of the almond crumble.

Cooking Times:

  • Berry Compote Simmering Time: 15-20 minutes

  • Almond Crumble Baking Time: 8-10 minutes

Serving Suggestions:

  • Breakfast: Serve the berry compote with almond crumble over plain Greek yogurt or cottage cheese for a protein-rich and satisfying breakfast.

  • Dessert: Enjoy it as a light and healthy dessert on its own.

  • Topping: Use it as a topping for sugar-free pancakes, waffles, or oatmeal.

  • Parfait: Layer the compote and crumble with Greek yogurt or coconut yogurt in a glass for a visually appealing and delicious parfait.

  • Warm or Cold: The compote can be served warm or cold, depending on your preference. The crumble is best served at room temperature or slightly warmed.

Tips and Variations:

  • Fruit Variations: Feel free to experiment with different types of berries or add other fruits like chopped apples or pears to the compote.

  • Spice Variations: Try adding a pinch of nutmeg or cardamom to the compote or crumble for a different flavor profile.

  • Nut-Free Option: Substitute sunflower seeds or pumpkin seeds for the almonds in the crumble.

  • Vegan Option: Ensure your stevia/erythritol blend is vegan-friendly. Some brands may use animal-derived processing aids.

  • Storage: The berry compote can be stored in an airtight container in the refrigerator for up to 3 days. The almond crumble is best stored in an airtight container at room temperature to maintain its crispness.
