For the Taquitos

  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 jalapeño, seeded & minced (optional)
  • 1.5 lbs lean ground turkey or chicken
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp cayenne (optional)
  • 1 (15 oz) can black beans, rinsed
  • 1 (15 oz) can corn, drained
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup shredded cheese (reduced-fat or Mexican blend)
  • 24 small corn tortillas
  • Cooking spray

For the Cilantro-Lime Rice

  • 1 tbsp olive oil
  • 1 cup long-grain rice
  • 2 cups vegetable broth
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • Salt & pepper

For the Black Bean & Corn Salad

  • 1 can black beans, rinsed
  • 1 can corn, drained
  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup cilantro
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1/2 tsp cumin
  • Salt & pepper

1. Build the Filling

Heat olive oil in a skillet over medium heat.
Sauté onion, bell pepper, and jalapeño until soft (5–7 minutes).

Add ground meat and cook until browned. Drain excess fat.

Stir in spices and cook for 1 minute to bloom the flavor.

Fold in black beans, corn, cilantro, and cheese.
Remove from heat and let it settle into a rich, hearty mixture.


2. Roll the Taquitos

Warm tortillas until soft and pliable.

Add about 2 tablespoons of filling to each tortilla.
Roll tightly and place seam-side down on a lined baking sheet.

Lightly spray with cooking spray.


3. Bake to Crisp Perfection

Bake at 400°F (200°C) for 15–20 minutes, flipping halfway through,
until golden and crispy.


4. Make the Cilantro-Lime Rice

Heat oil, toast rice for 1 minute.

Add broth, bring to a boil, then cover and simmer 18–20 minutes.

Let rest 5 minutes. Fluff and stir in lime juice + cilantro.
Season to taste.
