My Healthy Version of 10 Individual Pies with Customizable Crusts

The Nutty Food Critic Baking Pies

Yields: 10 individual pies

Cook time: 30-45 minutes per pie (depending on filling)

Crust Options (Choose one or mix and match):

1. Classic Honey-Sweetened Pie Crust (Makes enough for 5 individual pies):

* Ingredients:

* 2 ½ cups Non-GMO All-Purpose Flour

* ½ tsp Sea Salt

* 1 cup (2 sticks) Cold Unsalted Butter, cut into cubes

* 6-8 tbsp Ice Water

* 2 tbsp Honey or Maple Syrup

* Instructions:

1. In a large bowl, whisk together flour and salt.

2. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.

3. Drizzle in honey or maple syrup, then gradually add ice water, one tablespoon at a time, mixing until the dough just comes together.

4. Divide the dough in half, flatten each half into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

5. Roll out each disc on a lightly floured surface and cut out circles large enough to fit your individual pie tins.

6. Gently press the dough into the tins, trim the edges, and crimp as desired.

7. Pre-bake the crusts for 10-12 minutes at 350°F (175°C) before adding fillings that require less baking time.

2. Nutty Coconut Flour Crust (Makes enough for 5 individual pies):

* Ingredients:

* 1 ½ cups Coconut Flour

* ½ cup Almond Flour

* ½ tsp Sea Salt

* ½ cup Coconut Oil, melted

* 2 tbsp Honey or Maple Syrup

* 2 tbsp Water

* Instructions:

1. In a bowl, combine coconut flour, almond flour, and salt.

2. Stir in melted coconut oil, honey or maple syrup, and water until a dough forms.

3. Press the dough evenly into individual pie tins. This crust is best pressed, not rolled.

4. Pre-bake for 8-10 minutes at 350°F (175°C) before adding fillings.

3. Graham Cracker & Nut Crust (Makes enough for 5 individual pies):

* Ingredients:

* 1 ½ cups Graham Cracker Crumbs (Non-GMO)

* ½ cup Chopped Nuts (Almonds, Walnuts, or Pecans)

* 6 tbsp Melted Butter

* 2 tbsp Honey or Maple Syrup

* Instructions:

1. Combine graham cracker crumbs, chopped nuts, melted butter, and honey or maple syrup in a bowl.

2. Press the mixture firmly into individual pie tins.

3. Bake for 5-7 minutes at 350°F (175°C) before adding fillings.

Pie Filling Recipes:

1. Classic Apple Pie:

* Ingredients:

* 4 medium Apples, peeled, cored, and sliced

* 2 tbsp Lemon Juice

* ¼ cup Honey or Maple Syrup (adjust to taste)

* 1 tsp Cinnamon

* ¼ tsp Nutmeg

* 1 tbsp Flour or Cornstarch

* 2 tbsp Butter, cut into small pieces

* Instructions:

1. Preheat oven to 375°F (190°C).

2. In a bowl, toss apples with lemon juice, honey or maple syrup, cinnamon, nutmeg, and flour or cornstarch.

3. Fill pre-baked pie crusts with the apple mixture.

4. Dot with butter.

5. Bake for 30-40 minutes, or until the crust is golden brown and the filling is bubbly.

2. Blueberry Pie:

* Ingredients:

* 3 cups Fresh Blueberries

* ¼ cup Honey or Maple Syrup

* 2 tbsp Lemon Juice

* 2 tbsp Flour or Cornstarch

* Pinch of Salt

* Instructions:

1. Preheat oven to 375°F (190°C).

2. In a bowl, gently toss blueberries with honey or maple syrup, lemon juice, flour or cornstarch, and salt.

3. Fill pre-baked pie crusts with the blueberry mixture.

4. Bake for 35-45 minutes, or until the crust is golden brown and the filling is bubbly.

3. Cherry Pie:

* Ingredients:

* 3 cups Fresh Cherries, pitted

* ¼ cup Honey or Maple Syrup

* 2 tbsp Lemon Juice

* ¼ tsp Almond Extract (optional)

* Instructions:

1. Preheat oven to 375°F (190°C).

2. In a bowl, toss cherries with honey or maple syrup, lemon juice, flour or cornstarch, and almond extract (if using).

* ½ tsp Vanilla Extract

7. Coconut Cream Pie:

* 1 cup Heavy Cream

* ½ cup Sour Cream

* ½ cup Cream Cheese, softened

* ¼ cup Honey or Maple Syrup

* ½ cup Shredded Coconut

* ½ tsp Coconut Extract

* Instructions:

1. In a bowl, beat together heavy cream, sour cream, and cream cheese until smooth.

2. Add honey or maple syrup, shredded coconut, and coconut extract. Mix well.

3. Pour the mixture into pre-baked and cooled pie crusts.

8. Pecan Pie:

* Ingredients:

* 1 cup Pecan Halves

* ½ cup Honey or Maple Syrup

* ¼ cup Melted Butter

* 2 Eggs, lightly beaten

* 1 tsp Vanilla Extract

* Pinch of Salt

* Instructions:

1. Preheat oven to 350°F (175°C).

2. In a bowl, combine honey or maple syrup, melted butter, eggs, vanilla extract, and salt.

3. Stir in pecan halves.

4. Pour the mixture into pre-baked pie crusts.

5. Bake for 25-35 minutes, or until the filling is set.

9. Pumpkin Pie:

* Ingredients:

* 1 cup Pumpkin Puree

* ½ cup Honey or Maple Syrup

* ½ cup Heavy Cream

* 2 Eggs, lightly beaten

* 1 tsp Pumpkin Pie Spice

* Pinch of Salt

* Instructions:

1. Preheat oven to 350°F (175°C).

2. In a bowl, combine pumpkin puree, honey or maple syrup, heavy cream, eggs, pumpkin pie spice, and salt.

3. Pour the mixture into pre-baked pie crusts.

4. Bake for 30-40 minutes, or until the filling is set.

10. Key Lime Pie:

* Ingredients:

* 1 cup Heavy Cream

* ½ cup Sour Cream

* ½ cup Cream Cheese, softened

* ¼ cup Honey or Maple Syrup

* ½ cup Key Lime Juice

* 1 tbsp Lime Zest

* Instructions:

1. In a bowl, beat together heavy cream, sour cream, and cream cheese until smooth.

2. Add honey or maple syrup, key lime juice, and lime zest. Mix well.

3. Pour the mixture into pre-baked and cooled pie crusts.

4. Refrigerate for at least 2 hours before serving.

Serving Suggestions:

* Serve chilled or at room temperature.

Morning Strawberry Protein Shake

Garden Strawberries So, I like strawberries, and it is the season for all of us back yard growers to start picking! I downsized my plot of plants, but I still have some to pick periodically as they ripen.  The local farms should be ready for the "you pick deals" from June - mid July now! There are quite a few growers in the PNW to choose from. A local favorite is the  Biringer Farm , you can check out their website for more information.  After, of course, the morning coffee, I will make my breakfast shake. It consists of one cup of unsweetened almond milk, unsweetened coconut milk, or unsweetened oat milk. Normally when watching calories, I will opt for almond or coconut milk. I also like at times to mix all three to make one full cup!  I will add one scoop of whey, my morning vitamin, and one cup of frozen strawberries.
