Honey-Kissed Lady Fingers: A Healthier Treat

Making Tiramisu

I couldn't find any lady fingers in the grocery store I frequent, so I decided to make them from scratch for my Tiramisu. I also personally like substituting white sugar for honey or maple syrup in almost every recipe. These delicate lady fingers are a delightful treat, perfect for enjoying on their own or as a key ingredient in desserts like tiramisu. By using honey or maple syrup instead of refined sugar, we create a healthier and more flavorful version of this classic biscuit.

Ingredients:

* 4 large eggs, separated

* 1/4 teaspoon cream of tartar

* 1/2 cup honey or maple syrup (adjust to taste, maple syrup will impart a distinct flavor)

* 1 teaspoon vanilla extract

* 1/2 cup all-purpose flour (or gluten-free all-purpose blend, if desired)

* 1/4 cup cornstarch (or arrowroot powder)

* Powdered sugar or unsweetened cocoa powder, for dusting (optional)

Equipment:

* Stand mixer or hand mixer

* Two large mixing bowls

* Sifter or fine-mesh sieve

* Rubber spatula

* Piping bag fitted with a large round tip (or a Ziploc bag with a corner snipped off)

* Baking sheet(s)

* Parchment paper

Instructions:

1. Prepare the Egg Whites:

* In a clean, dry mixing bowl, beat the egg whites with the cream of tartar using a stand mixer or hand mixer until stiff peaks form. This is crucial for the lady fingers' light and airy texture. Be careful not to overbeat.

2. Prepare the Egg Yolks:

* In a separate mixing bowl, whisk together the egg yolks, honey (or maple syrup), and vanilla extract until the mixture is pale yellow and slightly thickened, about 2-3 minutes.

3. Combine the Mixtures:

* Gently fold about one-third of the beaten egg whites into the egg yolk mixture. This will lighten the yolk mixture and make it easier to incorporate the rest of the whites.

* Carefully fold in the remaining egg whites in two additions, being careful not to deflate the mixture. Use a rubber spatula and gently fold from the bottom up, rotating the bowl as you go.

4. Add the Dry Ingredients:

* In a separate bowl, sift together the flour and cornstarch (or arrowroot powder). This ensures a light and even distribution of the dry ingredients.

* Gradually fold the sifted flour mixture into the egg mixture in two or three additions, again being careful not to overmix. Overmixing will develop the gluten in the flour and result in tough lady fingers. Fold gently until just combined.

5. Pipe the Lady Fingers:

* Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

* Transfer the batter to a piping bag fitted with a large round tip. If you don't have a piping bag, you can use a Ziploc bag and snip off a corner.

* Pipe the batter onto the prepared baking sheet in 3-4 inch long strips, leaving about 1 inch of space between each lady finger.

6. Bake the Lady Fingers:

* Bake for 12-15 minutes, or until the lady fingers are lightly golden brown around the edges and spring back lightly when touched.

* Rotate the baking sheet halfway through baking to ensure even browning.

7. Cool and Dust:

* Remove the baking sheet from the oven and let the lady fingers cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

* Once cooled, dust the lady fingers with powdered sugar or unsweetened cocoa powder, if desired.

Morning Strawberry Protein Shake

Garden Strawberries So, I like strawberries, and it is the season for all of us back yard growers to start picking! I downsized my plot of plants, but I still have some to pick periodically as they ripen.  The local farms should be ready for the "you pick deals" from June - mid July now! There are quite a few growers in the PNW to choose from. It consists of one cup of unsweetened almond milk, unsweetened coconut milk, or unsweetened oat milk. Normally when watching calories, I will opt for almond or coconut milk.
